The Ph.D. will focus on analyzing meat characteristics and correlating them with sustainable farming methods.
Specific parameters such as juiciness, tenderness and color will be explored in relation to the general topic. These three parameters are considered as important and decisive for consumers as they are related to the purchase and consumption.
