WS objectives: After a short summary of the basic of risk analysis (relative importance, principles and concepts), qualitative and quantitative risk assessment methodologies will be presented with practical applications in chemical risks (furan in food, pesticides in beeswax and honey), in microbial risks (risk exposure assessment of tick-borne encephalitis virus in milk, hepatitis E virus in pig products, and Influenza virus in the air, risk assessment of the introduction of an infectious disease in a previously unaffected country, economic impact of West Nile fever using scenario analysis), antimicrobial resistance risk, exposure risk assessment of acaricide residues in milk.
